    My ribeye was perfectly cooked. I did not care for the demiglaze because I felt that it detracted from the flavor and seasoning of the steak. I also tried the Pomme Williams and I wished I had ordered something else. In all honesty, it looked and tasted like a special from Applebee's or something along those lines. the grilled asparagus met expectations. staff was courteous, professional and helpful. i would definitely go back again.

    There was nothing bad with our meal, it was just ... disappointing. Service was fine, though my steak was way overdone. I ordered it medium well and specified pink in the middle. I received something beyond well done, completely grey and dried out. The rest of the food was fine, (a bit salty but that is so common these days) so I just took the steak home for the dog, But overall, the feeling was that the restaurant has gotten tired. That women's restroom was in disrepair - the holder for the toilet paper had been ripped off the wall, and for some reason, unopened packages of paper towels were balanced on a trash bin in the cubicle (these presumably make their way out to the sink for hand drying). At the sinks, the faucets are loose. In the restaurant itself, the waitstaff wears a uniform of black pants and tops, but one person, maybe the manager, was dressed like she should have been at a biker bar, complete with keys hanging from the outside of her belt loop. I'm not usually judgmental, but it just added to the feeling that the restaurant is no longer fancy, nor even casual, but just .... can't be bothered.

    I was extremely disappointed with my dining experience at the Canyon Chop House. My steak came out less done than medium rare when I ordered medium - for a steak house, you think this would be their area of expertise. My "wedge salad" was a slab of lettuce, blue cheese dressing and 4 little bacon bits, oh and 1 cherry tomato cut in half. The "house cut steak fries" that I was told were delicious by the server, were honestly the blandest fries I've ever had. I could have had better fries from a fast food joint - and I hate fast food. I have no problem dropping $100 on a nice dinner from time to time, but when you do so and get the quality that this restaurant had to offer, it is extremely disappointing. I will not be returning!

    The service was so bad we ended up leaving after only having an appetizer. We waited 20min after ordering a bottle of wine only for the waitress to return and ask again what our order was. Well 15 min later she shows up with the wrong wine! Gotta wonder if it really was a mistake that a $100 bottle showed up in place of the $42 bottle I had twice ordered. Well after waiting another 10min forv our wine and having a really poor carpacchio as an appetizer we gave up. FWIW the carpacchio was tasteless. In line with several other reviews here the management response to our explanation as to why we were leaving was zilch. Not even an apology.

    We celebrated our anniversary at Canyon Chophouse and could not have been happier. Service was excellent and the food was even better! They even gave us a complimentary taste of champagne for our special occasion. Will definitely return!

    We went here to get a good steak and we got just that. Yeah the waiters were wearing jeans and blah blah blah but who cares? The restaurant, food, and atmosphere is nice. I could care less if the waiters were wearing jeans!!! The garlic mashed potatoes were good and so were the mussels! It took us atleast an hour and 15 to eat here but it was a good and consistent wait between each meal. Fancy place!

    I eat here at least once a month. I own a local business and end up entertaining visiting clients at least 3-4X per month. Canyon Chop House has always been a sure thing for clients coming from more upscale environs like New York or Chicago who expect a little more than our laid back Colorado fare. Canyon Chop House is the closest thing we have in Fort Collins to a Michelin Red Guide type of restaurant. The other closest being Jay's Bistro in Old Town or Chimney Park in Windsor. Honestly, that's about it for true upscale dining in this neck of the woods - but, we're fine with that. There are better things to do than eat at fancy restaurants - like beer tours, bike rides or sightseeing! I've probably had 40 - 50 dinners with groups large and small at the Chop House and NEVER a bad experience. Actually, most come with a pleasant, unexpected surprise - a potato chip covered in caviar compliments of the chef, a foie gras cracker delivered by the wait staff, a surprise seating in the vault - stuff like that. I've noticed lately that the Chop House is doing an even better job of delivering bang for the buck. My last order of lamb was more than I could eat - but still spectacular. Everyone at the table commented on the portion size as being impressive. Honestly, I'm surprised there are bad reviews. I guess the out-of-town reviewers don't surprise me too much. We're used to waiting a little longer in Colorado, I suppose. That may irritate some. And, our laid back attitude may be considered "surly" by east coast snoots but, as Colorado restaurants go - and especially Fort Collins restaurants, it's either Canyon Chop House, Jay's Bistro or Chimney Park. As a former Torontonian, Washingtonian and Chicagoan, I've been to plenty of fancy restaurants (I just ate at French Laundry and Ad Hoc in Napa a few weeks ago), I have no problem putting Canyon at the top of the list and I don't know of anyone personally that would disagree.

    I took my fiancee here as a celebration of our engagement earlier in the day. When making a reservation, I had noted online that we would be celebrating our engagement. I was very impressed that the hostess and servers were aware of this and congratulated us upon introduction. We started off with some champagne, which was very dry but a good way to start off our meal. For an appetizer, we tried the seared pork belly with melted gruyere, poached egg, and hollandaise. As the server stated, this was literally a plate of breakfast for dinner and was amazing. For our salads, we each ordered the wedge salad with pancetta and blue cheese vinaigrette. My fiancee enjoyed this, but I felt the dressing was too bitter and sour. I was disappointed. In terms of entrees, my fiancee ordered braised short ribs with cheese spaetzle and sauteed greens. She couldnt stop telling me how good it was. I had a taste and was blown away by the braising liquid/sauce they used. Very flavorful but it didnt overpower the short rib. I ordered a New York Strip with peppered onion rings and a mixture of haricot verts, green olives, and garlic. The steak was cooked perfectly but there wasn't enough demi glace for me to enjoy. The sides were fantastic. One important note that really derailed our experience - the temperature outside was about 85 degrees and they decided against turning on the AC for some reason. It was brutally hot and extremely uncomfortable inside the restaurant. It really sapped some of the enjoyment out of our meal. Pros: Good, attentive service Excellent food for the most part Nice atmopshere Diverse and fun menu Cons: Temperature in the restaurant was brutal Unappetizing dressing for the salad All in all, I enjoyed my experience here and with a couple tweaks it could be the best restaurant I've been to in Northern Colorado.

    The Canyon Chop House has the best steaks in Fort Collins in my opinion. The prices may be expensive, but the class of service, atmosphere, and food quality warrant it. The Canyon Chop House stays on the list of options when we are looking for a nice dinner or want to go out with friends.

    I wanted to like this place. I really, really did. As many have said, it's in a beautiful old bank, and the ambiance is quite nice. They get two stars, though; my major issues with our visit: * OMG SALT! Too much salt in the salad dressings. Too much salt in the mashed potatoes. Too much salt in the demi-glace. Too much salt usually means you're trying to cover poor quality food. I don't really know what's going on here, because the steak without the demi-glace was flavorful. (Lamentably, the demi-glace was _so_ salty, I'd argue it actually ruined the filet I had.) * The service itself was acceptable, but the servers' knowledge of the food/menu was lacking. We ordered the cheese plate as an appetizer, and the server dropped it off without letting us know what the cheeses were. We could've been eating Velveta for all we knew. Also, they didn't provide silverware (or plates, now that I think about it) for the cheese platter, so we were using our butter-covered bread knives to spread the cheese on the crackers, and eating it on existing dirty dishes that were at the table. * The bar service (or service-from-the-bar-to-the-table) was slow. We went on a slow evening (dining room wasn't even close to full), and had to wait to put cocktail orders in, and get them. When dinner came, I had to ask where the wine was while the food got cold. This is annoying for me, but totally insane from the standpoint of a restauranteur. (Protip: this inefficiency is where you're leaving money the table! In a similar vein, requiring customers to ask for the dessert drink menu [with port, scotch, dessert drinks, etc.] is also leaving money on the table.) I'll probably try to give this place another chance, but for the price and the hyped up reputation, our visit was a disappointment.

    The service was good. We sat in the back patio and the weather was great. Our server was great but... I ordered the seared duck breast and duck confit leg. I love duck breast. I get it everywhere. Mine came with a breast well done. I assumed it would be red inside because that's how it's done normally. It was gray and well done. I asked if it was always cooked well done. The server who was very professional said its not usually that way and offered to have it redone. My companion in the meantime ate his meal while I watched. When my plate came, it looked exactly the same. The server insisted the duck was a lot less "done" than it looked. Really??! It was still gray. By this time my companion had finished his meal and I still couldn't eat mine so we settled up. I told the server that it was still too overdone for me. We got our bill and he gave me the cost of a wine on the house. I enjoyed my happy hour wine. What I did not enjoy, and did not eat, was my entree. He should have taken that, not my wine off the bill. I paid just about $28 for a duck entree I never ate. Shocking. If you go here to the canyon chophouse do not get the food. Drinks only, at the happy hour price. And seriously, don't order the overdone gray duck. Ick. Soft enough but duck breast well done is a serious food crime. And for god sakes call it braised or poached duck breast not seared duck breast. Serious food crime to serve gray duck breast. Update: this is the response I received from the restaurant. RUDE RUDE. Hello Jill, I am terribly sorry that you were unsatisfied with your meal. I actually did check the first duck with my head chef as it came back the first time. Under the kitchen lights it still looked quite pink in the middle, and the confit duck leg was bright pink throughout. We gladly sent out a second duck that was cooked for far less time in an attempt to meet your approval. The $9 up charge for the lobster mashed potatoes (one of our most popular sides) is in keeping with market price for the ingredients, and it is not our policy to take food off of a bill if it has already been replaced. I am only authorized to discount an item if it does not meet customer satisfaction if there is no way to replace the item and it is returned to us unfinished so I can count it as a loss, but the entire meal was prepared twice. We all regret that you were not happy with your experience, since my chefs take great pride in the preparation of our menu. I, personally, have had overcooked duck before but never here, and I'm fairly certain that even then it wasn't "inedible". In over 20 years of customer service, I am always sad to find that despite our best efforts, we can't always please everyone.     Overpriced! The pompous manager will give you every excuse in the world for the chef's inability to execute a dish! Do not waste hard earned money here, maybe waste trust fund money if you must! Sad, sad excuse for a so-called gourmet steakhouse! Order at your own risk! Keep it simple!

    We went there before a show at the Lincoln center. We were in a hurry and management and staff were great. They made room for 6 of us, provided rushed service and got us out in time to make the show. Keep up the good work :). The food was awesome also. Some had fish, other steak or appetizers. Everyone enjoyed and we will be regulars.

    Just OK... not that impressed for the price. Trout was very good and good selection of Beer and Wine Server was bad mouthing another server... unprofessional even for 7th graders Service started out well, then a long wait. We were told that the kitchen was backed up... but not many people in the place. I wanted the filet, but for $40 it was too pricey. Does not compare to places like Pappas Brothers in Dallas or Bern's in Tampa and in the same price range? Don't think we will go back

    My husband and I were in Fort Collins celebrating our wedding anniversary and spending time with family. After researching area restaurants, we settled on Canyon Chop House for our anniversary dinner based on the appetizing menu and the reviews. Although the building is hard to find (we had to turn around several times), the interior is quite lovely and we appreciated the old bank vault door they had retained. Our server was friendly, though slow. The beer list was fairly extensive, which we appreciated, but that's not unusual in Colorado. We started with drinks and the seared pork belly appetizer. The seared pork belly was quite tasty - a good combination of sweet and salty with bitter greens and creamy cheese. Between courses, I excused myself and found that the bathrooms were filthy. I was really surprised as the rest of the restaurant was clean and tidy. After that, my husband pointed out that the kitchen staff does not wear gloves when working with raw meat nor did we notice the cooks washing their hands. As a chef, he notices these things, but we didn't find it too concerning at the time (maybe the beer clouded our judgement...) as the restaurant was so well-reviewed and seemed to be of high quality. My husband ordered the rack of lamb with a wedge salad and I had the prosciutto-wrapped chicken with a mixed-green salad. We both greatly enjoyed our dinners and had a lovely time. Unfortunately, the feeling didn't last long. Less than two hours later, my husband became violently ill. We were planning to drive home the next day (a 10 hour trip), but it became very clear that he would be unable to travel. The next morning he was diagnosed with food poisoning induced gastroenteritis. Needless to say, we won't be back.

    I along with three friends had a horrible experience here. . Such abominable service and surly attitude cannot be justified or tolerated. Won't be back either Drinks, oh sure, well if you wait long enough that is. After 10 minutes when we could find her, we asked our server ( if I could be generous with the term ) about how long we had been sitting there waiting on our cocktails and she said it was the bartenders fault then disappeared for another 10 minutes. Oh boy, bad start: server pretty scarce and carrying a big attitude. Hey we are supposed to be in a top notch steak house here. While on the servers and staff, mind you we are in a high end, white table cloth, very expensive restaurant with nice ambiance, and all the staff wear jeans. Completely incongruent, but after the fact I realize it matches their training and attitude. There was not one customer in there in jeans. This is a special occasion place and everyone is dressed for the occasion. Steaks, oh yes we are in a chop house so we all order steaks right. Well we are now wondering where they are. We have been her well over an hour now and still no meat on the table. Ask the server again, and what do you guess she would say: oh 'sorry about that, they are all baked up in the kitchen and you meals should come out soon". Okay how soon do you think? "I don't know". Then she just walked away! Alright then, after a few more minutes, could we speak with the manager then? Manager comes and says sorry we are busy tonight. Oh, good excuse, not. Sorry your busy, perhaps that is a bad thing for your business, perhaps we should not have come in and made it worse. So could we ask why some folks who came in after us have eaten and left already? "No you are wrong they were here before you". Oh gee no they weren't, all four of us can assure you that we had ordered our food before they even sat down. Manager - "oh you all must be mistaken". Okay, getting pretty ticked off now, bad service, err poor service and now poor attitude from the server and so called manager. Well the steaks do come, but two at a time for a table of four. We say, to our companions don't wait, go ahead and start eating, don't let your steaks get cold. A few minutes later the two other steaks do come out and they are stone cold. Can we see the manager again please? And we thought the evening was bad already and could not get worse? How wrong. Steaks went back to be reheated. Can you imagine, forty dollar steaks being reheated. Oh my. Steaks came back out, companions are long done eating. What does the manager say now? Oh, we are so sorry for your bad experience tonight, so I am going to give you the employee discount on your two steaks. What? You are kidding right? Such abominable service and surly attitude cannot be justified or tolerated. Won't be back either.

    I would eat here weekly if I could afford it. I have gone to business group dinners as well as dinner with my husband and had excellent service. The food is beyond fabulous although you pay for that. It's a great place to take out-of-towners if you are looking to impress. We used to use Jay's Bistro for that but now we go here. Buffalo steak is to die for! It has a private party room (which is nice). A must for a business group dinner to impress

    Called same day and were accommodated for a party of four, restaurant had nice atmosphere and a really cool vault. Our server(s) were great, always available but never hovering. We ordered the pork belly and tri tip apps which were both fantastic. Entrees included a filet, ribeye, and crab cakes. The filet was tender & cooked perfectly, ribeye a little tough, and crab cakes had great flavor but a bit over browned. Desert was a peanut butter mouse and chocolate ganache - excellent, and surprisingly light after a heavy meal. Despite a couple of things still overall a nice meal.

    We came for the happy hour prices and stayed for the amazing dinner. We started with draft and skewers. Delicious. Then hubby ordered rib eye whilst I ordered the petit filet. We would have taken photos but we inhaled our meals. Best 4 oz filet with mushrooms, sauce and veggies EVER. Meltiest rib eye. Food expensive and worth it for a our celebration dinner out ( we just got a house) PS Our server was awesome. Service was excellent. Food was heavenly #meatgasm

    Went here for dinner with my parents last weekend. I actually made the reservation through yelp for the first time, but it worked well - they called me the afternoon of our reservation to confirm we were still coming. The restaurant is kind of off to the side in what looked to be an office building, but don't let that fool you. It's actually pretty nice inside. Anyways, we had to wait a bit for our table, since the people before us paid but decided to hang out and talk an extra half hour or so. Several people offered us drinks, but we just decided to sit on the couch and wait. Finally at our table, we ordered drinks and appetizers. They have a decent wine and beer selection, and a couple choices for hard cider. We also got the cheese plate and beef tips for appetizers. I loved the cheeses and nuts on the plate, and they use local sources! Great goat cheese. I ordered the braised short ribs, and my parents got the lamb dish and the t bone steak. It was all really good, but I was really full and had no room for dessert :( I wonder if I can go back just for dessert? We used a groupon and the yelp check in deal, so we ended up also getting 25% off our first round of drinks! All in all, great experience, good service, yummy food.

    A fancy place, definitely not cheap, good to go to with parents or for a special occasion. Went there for the small plates thing in fort collins in march, so it was a pre-done menu, I would like to go back and experince the regular menu. The fish I had was great as was the wine. The brownie for dessert was terrible though. It's in a tricky location so just keep your eyes peeled if you are looking for it.

    The Canyon Chop House is definitely the fanciest restaurant in town. The decor is upscale and the vault is awesome. The restaurant is divided up into a few rooms, which is nice since it keeps the noise level down compared to a loud place like Austin's. The service is outstanding. I went for Great Plates - a great way to try the restaurant without breaking the bank. I had the prosciutto-wrapped chicken breast that was mind-blowing. The salty crust of the prosciutto and the sweet reduction sauce drizzled on was like heaven in a bite. The bleu cheese polenta was a bit strong for me, but I'm not a huge bleu cheese fan in the first place. The Rocky Mountain trout was expertly cooked and delicious as well. A unique side on the menu I hadn't seen before is the pomme williams. It's mashed potatoes mixed with gorgonzola, hand-shaped into a pear shape, breaded and fried. It sounded very bizarre - but believe me, it's glorious. The desserts were equally amazing; the brownie and peanut butter ice cream was expertly portioned to work perfectly together. The strawberry sorbet was creamy and delicious. A big downside was the selection of white wines - I've seen better wine lists at many of the lower-class restaurants in town. The white wines were all domestic. No German Riesling, guys - really? The wines weren't quite Kendall Jackson, but needless to say it's the kind of stuff that's readily available at most liquor stores in town. Not up to par with the class of the restaurant. I didn't check out the red wines, so maybe that list was more impressive. The price is a bit prohibitive, I can't imagine paying $40 for a filet more than once or twice a year. Foodies might attest that price is no object for the best of the best, though. I highly recommend checking them out March 1-14 for Great Plates!

    This has become one of my favorite restaurants in Fort Collins. If you go, you MUST have the Sauteed Beef Tenderloin Tips, Hazel Dell Mushrooms with Crispy Gorgonzola Potato Cake and Port Demi, it will literally melt in your mouth. As far as entrees, I haven't tried anything beyond the steaks but I've not gone wrong with any of my choices so why change it up. I'm assuming their specialty dishes are just as incredible; however, I can't stay away from the steaks when I'm there. If you are in Fort Collins for any reason whether it be business or pleasure, you must try Canyon Chop House.

    UPDATED 5-3-2013 to 4 stars. (See original review below) Had to review again because our 1st experience seemed so different from others'. Have now revisited multiple times and it does seem that the initial trip was an oddity. With many visits since, meals have been consistently well-prepared with high-quality product and pleasant, attentive service from everyone (though our original waitress has not been seen since the first trip). And yes, the steaks which so disappointed us that first time, have been excellent. So, either we had a bad first experience, they made some changes, or some of both. In any event, we will return and recommend that others try the CCH. ORIGINAL REVIEW FROM 10-16-2010. Am writing this after only one experience, but felt compelled given the generally high ratings noted here. With 6 people at the table, the steaks were, quite frankly, our least impressive plates. The trout (served with scallops) was nice, as were the chicken and pasta dishes. However, the steaks just didn't make it. They appeared to be purely "open grilled" in some manner, not seared. Without searing heat, someone who wants medium rare gets nice grill "lines", but no crust and no texture to the meat. There's too much surface moisture when lower temp steaks come to the table. These weren't served on heated plates. I expect more from a high-end steak house. Get a salamander or something. Cast iron and salt work wonders. Warm your plates. Bigger item for us, was that the kitchen mis-fired on a rib-eye and sent out near-raw instead of medium rare. OK - that happens and a re-fire request isn't uncommon. Waiting 15 minutes for that re-fire is. Adding insult, we then had to request a replacement of the side dishes, which became cold while waiting 15 minutes. Not a good situation for a $40 steak. Most plates at the table were near-finished by the time the re-fire came out, but there was no reflection of the mishap or the extended delay when the check came. All items charged, full "automatic service charge" for a party of 6 (or more). Again, for a supposedly high-end place, I'd expect some recognition that the dining "experience" was muffed - even if only a dessert comp for the affected diner. Nope. Our take though, was that the near-absent server probably didn't notice. We had to flag her down more than once though the restaurant was less than half-full. MIght this have been unusual? Sure. A follow-up trip may yield better service and attention to detail. Til that happens though, it's a bit above average food with much higher than average prices. Am giving 3 stars instead of 2 because the non-steak plates were well-regarded by our diners.

    This place keeps disappointing. I got engaged here and thought I would take my wife again for her birthday. Bad decision. No greeter at the door. Had a reservation and they were supposed to dress up the table for my wife's birthday. That didn't happen. After being sat we waited 7 minutes before being greeted. Got my salad wrong and then took it back and forgot to replace it. I asked for drink recommendations. He had none. Asked about the buffalo ribeye and he says he usually only does the filet. The bread was also cold and seems very unappetizing. We ended up leaving early. In short, I have had better experiences at Chillis than this. They owe me big time.

    The Canyon Chophouse confuses me a little. They have upscale decor and atmosphere for Fort Collins and good service. But while they always prepare and cook a perfect steak (which they should for at this price!) they sides you can select from belong in any of the nearby chain fast-food restaurants. Why does my $30 steak need onion rings or a wedge of lettuce?! If anyone there reads these reviews, please look up the menu for Gaucho Grill, Picadilly, London, UK. That place sets the standard you guys could really learn from.

    I read all of the reviews but wanted to experience and input a more current one. In the door, I was greeted quickly by waitress headed to pick up orders, but there was no hostess present. This restaurant has upscale, business-people setting in business park area but dress is casual. As such, tables were covered with white linen with butcher-block paper over the top. Now, I know why they do this, but paper over linen tells me management wants a cheap cleaning fix. I felt this was rather insulting, as if guests were "expected" to be pigs and make a mess. Paper on the table is best reserved for crab houses on the East Coast or BBQ places, where the intent is to make a mess. For the drink, I chose the waitress-recommended local brew Funkwerks Brewery "Cezanne". It was delicious, medium ale that would pair well with much on the menu if you didn't choose wine. Wine menu was extensive, but each type only offered one or two selections via glass, the rest by bottle. Pricing was pretty high. Some brands were quite pricey versus retail. Bread service was timely, but only offered sliced baguette. In contrast, most upscale steak and chop houses give you a selection. The baguette was definitely day-old, crusty, and chewy. Another waiter came by with a very small sample of pork cutlet with strawberry and balsamic reduction. It was a small sample, barely 1 ounce size, and although thoughtful, seemed out of place and feeble attempt at sampling. The pre-entrée salad was mixed greens with light balsamic reduction which was small but fresh and tasty. For the main course, I chose the Double-Cut Pork cutlet (this IS a Chop House so it SHOULD be good). This three-inch, bone-in cut is typically difficult to cook right without becoming dry and rubbery. My portion was tender and juicy with center slightly pink. Most people concerned with uncooked pork might have been worried but I wasn't. It was served demi-glace with seared greens and house-made onion rings. The seared greens were delicious and good addition. However, the oversized portion of French-fried onion rings was way over the top. The portion literally covered half the plate. I see now why other reviewers commented on this. The only contribution the onion rings added was a greasy, fried mess. I did mention to the waitress that onion rings were a bad pairing. This is a upscale steakhouse, not a Outback or Road House. My overall rating is four-stars, based upon ambience, quality of food, and quality of service. Service was very attentive in a nice, relaxed and overall quiet environment and pricing was in the range expected (Fort Collins dining is not cheap). A large table of British businessmen nearby carried on a spirited conversation but the volume wasn't obtrusive. I was not impressed by the choice of sides, limited bread service, and small, curious chef sample. Another downgrade was the butcher paper covering. It also seemed wait staff made puzzling choices. One waiter bussing a table wrestled with all the plates, glasses, and paper covering rolled into an almost unmanageable package before heading back to the kitchen. It was slightly scary calamity knowing one false move would have spilled the entire mess on customers nearby. It would have been better for him to make two trips. Being away from the downtown scene, this restaurant CAN and SHOULD do more to compete with College Avenue locations like Kitchen and Rare which do their job well. Adding more up-scale sides like sautéed Shitake or Black Truffle mushrooms, uncommon vegetables, wild grains, or spicy side dishes like Chutney will make these main courses STAND OUT and drive more customers their direction. Hey Management...here's an idea...how awesome would a Hatch Green Chile Mole be with the Pork Cutlet? Now That's a good pairing!

    Consistently the best restaurant in Fort Collins. I have been here many times and even proposed to my wife at Canyon Chop House. The quality of the food is beyond reproach and the service is great, which is rare in Northern Colorado. We are moving back to Phoenix very soon and coming in for a last dinner is on the checklist of things to do before we leave.

    We dined here with friends on Sunday, 4/19/15. The service here is wonderful - helpful, friendly, attentive without being annoying. The food, alas, was only mediocre and not served more than lukewarm. Our companions had recommended this restaurant but I could tell by their expressions they were disappointed. There were very few customers in the restaurant and, perhaps, that was the problem with the kitchen staff. Just not that interested in doing a great job on a slow night. The wine list is quite good but they were out of the one wine I wanted - an Educated Guess cabernet. Also, no espresso which I thought was very odd in a beef-centric restaurant. I believe we'll try it again someday because the potential to be very good is there - - just not this past Sunday. We very much enjoyed the quiet adult atmosphere.

    We are visiting Fort Collins from Pittsburgh. It was my husbands 30th birthday so we decided to check out the Canyon Chop House for a nice dinner. It was overall a wonderful experience. Our steaks were amazing and perfectly cooked. The waitress was so nice and friendly. The ambiance is nice - although it seems like there might be some "cooler" restaurants in Fort Collins. But for a nice steak dinner, I would definitely recommend this restaurant.

    We were at the Chop House celebrating our anniversary. I had been once before and remember it being very good. We made the reservation through OpenTable and mentioned that it was a special occasion. They gave us a big booth right next to infamous vault door - so cool. Our waitress was very helpful with suggesting some wine for us, but wasn't paying great attention apparently since she had to return to the table a couple times for us to remind her what we ordered. No biggie...she was very friendly and the food ended up all being correct. Best part of the meal?? Our appetizer: truffled scallops with beets. Amazing. I almost wish I had gotten that for my entree. Highly recommended. I ordered the larger filet with sautéed spinach and garlic mashed potatoes. I thought everything was very tasty, my boyfriend didn't love the filet but admitted it was good. He got the lamb shank which was very tender and flavorful. While everything was good, it was also very expensive (which we were prepared for)...it's just probably not my favorite place in town for a "big splurge" for a nicer meal.

Trout was very good and good selection of Beer and Wine Server was bad mouthing another server... unprofessional even for 7th graders Service started out well, then a long wait. We were told that the kitchen was backed up... but not many people in the place. I wanted the filet, but for $40 it was too pricey. Does not compare to places like Pappas Brothers in Dallas or Bern's in Tampa and in the same price range? Don't think we will go back

    My husband and I were in Fort Collins celebrating our wedding anniversary and spending time with family. After researching area restaurants, we settled on Canyon Chop House for our anniversary dinner based on the appetizing menu and the reviews. Although the building is hard to find (we had to turn around several times), the interior is quite lovely and we appreciated the old bank vault door they had retained. Our server was friendly, though slow. The beer list was fairly extensive, which we appreciated, but that's not unusual in Colorado. We started with drinks and the seared pork belly appetizer. The seared pork belly was quite tasty - a good combination of sweet and salty with bitter greens and creamy cheese. Between courses, I excused myself and found that the bathrooms were filthy. I was really surprised as the rest of the restaurant was clean and tidy. After that, my husband pointed out that the kitchen staff does not wear gloves when working with raw meat nor did we notice the cooks washing their hands. As a chef, he notices these things, but we didn't find it too concerning at the time (maybe the beer clouded our judgement...) as the restaurant was so well-reviewed and seemed to be of high quality. My husband ordered the rack of lamb with a wedge salad and I had the prosciutto-wrapped chicken with a mixed-green salad. We both greatly enjoyed our dinners and had a lovely time. Unfortunately, the feeling didn't last long. Less than two hours later, my husband became violently ill. We were planning to drive home the next day (a 10 hour trip), but it became very clear that he would be unable to travel. The next morning he was diagnosed with food poisoning induced gastroenteritis. Needless to say, we won't be back.

    There was nothing bad with our meal, it was just ... disappointing. Service was fine, though my steak was way overdone. I ordered it medium well and specified pink in the middle. I received something beyond well done, completely grey and dried out. The rest of the food was fine, (a bit salty but that is so common these days) so I just took the steak home for the dog, But overall, the feeling was that the restaurant has gotten tired. That women's restroom was in disrepair - the holder for the toilet paper had been ripped off the wall, and for some reason, unopened packages of paper towels were balanced on a trash bin in the cubicle (these presumably make their way out to the sink for hand drying). At the sinks, the faucets are loose. In the restaurant itself, the waitstaff wears a uniform of black pants and tops, but one person, maybe the manager, was dressed like she should have been at a biker bar, complete with keys hanging from the outside of her belt loop. I'm not usually judgmental, but it just added to the feeling that the restaurant is no longer fancy, nor even casual, but just .... can't be bothered.

    I eat here at least once a month. I own a local business and end up entertaining visiting clients at least 3-4X per month. Canyon Chop House has always been a sure thing for clients coming from more upscale environs like New York or Chicago who expect a little more than our laid back Colorado fare. Canyon Chop House is the closest thing we have in Fort Collins to a Michelin Red Guide type of restaurant. The other closest being Jay's Bistro in Old Town or Chimney Park in Windsor. Honestly, that's about it for true upscale dining in this neck of the woods - but, we're fine with that. There are better things to do than eat at fancy restaurants - like beer tours, bike rides or sightseeing! I've probably had 40 - 50 dinners with groups large and small at the Chop House and NEVER a bad experience. Actually, most come with a pleasant, unexpected surprise - a potato chip covered in caviar compliments of the chef, a foie gras cracker delivered by the wait staff, a surprise seating in the vault - stuff like that. I've noticed lately that the Chop House is doing an even better job of delivering bang for the buck. My last order of lamb was more than I could eat - but still spectacular. Everyone at the table commented on the portion size as being impressive. Honestly, I'm surprised there are bad reviews. I guess the out-of-town reviewers don't surprise me too much. We're used to waiting a little longer in Colorado, I suppose. That may irritate some. And, our laid back attitude may be considered "surly" by east coast snoots but, as Colorado restaurants go - and especially Fort Collins restaurants, it's either Canyon Chop House, Jay's Bistro or Chimney Park. As a former Torontonian, Washingtonian and Chicagoan, I've been to plenty of fancy restaurants (I just ate at French Laundry and Ad Hoc in Napa a few weeks ago), I have no problem putting Canyon at the top of the list and I don't know of anyone personally that would disagree.

    I was extremely disappointed with my dining experience at the Canyon Chop House. My steak came out less done than medium rare when I ordered medium - for a steak house, you think this would be their area of expertise. My "wedge salad" was a slab of lettuce, blue cheese dressing and 4 little bacon bits, oh and 1 cherry tomato cut in half. The "house cut steak fries" that I was told were delicious by the server, were honestly the blandest fries I've ever had. I could have had better fries from a fast food joint - and I hate fast food. I have no problem dropping $100 on a nice dinner from time to time, but when you do so and get the quality that this restaurant had to offer, it is extremely disappointing. I will not be returning!

    The service was so bad we ended up leaving after only having an appetizer. We waited 20min after ordering a bottle of wine only for the waitress to return and ask again what our order was. Well 15 min later she shows up with the wrong wine! Gotta wonder if it really was a mistake that a $100 bottle showed up in place of the $42 bottle I had twice ordered. Well after waiting another 10min forv our wine and having a really poor carpacchio as an appetizer we gave up. FWIW the carpacchio was tasteless. In line with several other reviews here the management response to our explanation as to why we were leaving was zilch. Not even an apology.

    We went here to get a good steak and we got just that. Yeah the waiters were wearing jeans and blah blah blah but who cares? The restaurant, food, and atmosphere is nice. I could care less if the waiters were wearing jeans!!! The garlic mashed potatoes were good and so were the mussels! It took us atleast an hour and 15 to eat here but it was a good and consistent wait between each meal. Fancy place!

    A solid 4 stars. Good food, friendly service, and comfortable atmosphere. I would definitely recommend the tomato soup appetizer, it comes with a grilled cheese sandwich and is delicious. It is a generously sized appetizer and could be an entree if you're not too hungry. I'm not a big meat eater and appreciated (and enjoyed!) the pasta dish loaded with fresh vegetables. Fresh local food and a large beer selection. You don't have to be really dressed up, but I would recommend more than jeans and a t-shirt.

    I must confess that I only go here for happy hour, but the happy hour is great. A variety of wines at happy hour prices and always some good ones. The happy hour appetizers are perfect. The fries are so good and while there's isn't a lot of variety of cheese on the cheese plate, there's a nice selection of cheese, crackers and fruit. The staff is always really friendly and the fact that this building used to be a bank and the vault is still there is pretty cool.

    I wanted to like this place. I really, really did. As many have said, it's in a beautiful old bank, and the ambiance is quite nice. They get two stars, though; my major issues with our visit: * OMG SALT! Too much salt in the salad dressings. Too much salt in the mashed potatoes. Too much salt in the demi-glace. Too much salt usually means you're trying to cover poor quality food. I don't really know what's going on here, because the steak without the demi-glace was flavorful. (Lamentably, the demi-glace was _so_ salty, I'd argue it actually ruined the filet I had.) * The service itself was acceptable, but the servers' knowledge of the food/menu was lacking. We ordered the cheese plate as an appetizer, and the server dropped it off without letting us know what the cheeses were. We could've been eating Velveta for all we knew. Also, they didn't provide silverware (or plates, now that I think about it) for the cheese platter, so we were using our butter-covered bread knives to spread the cheese on the crackers, and eating it on existing dirty dishes that were at the table. * The bar service (or service-from-the-bar-to-the-table) was slow. We went on a slow evening (dining room wasn't even close to full), and had to wait to put cocktail orders in, and get them. When dinner came, I had to ask where the wine was while the food got cold. This is annoying for me, but totally insane from the standpoint of a restauranteur. (Protip: this inefficiency is where you're leaving money the table! In a similar vein, requiring customers to ask for the dessert drink menu [with port, scotch, dessert drinks, etc.] is also leaving money on the table.) I'll probably try to give this place another chance, but for the price and the hyped up reputation, our visit was a disappointment.

    Went here tonight based on a recommendation. It is now the top restaurant I've visited in Fort Collins. I was here on business, solo, thus I ate at the bar. Ordered the half-dozen oyster starter....excellent! Had the Colorado trout/scallop entree (menu staple). It was the bartender's (Matt) suggestion ---- phenomenal! They have a great wine list as well.....the staff (especially Matt) seemed to very knowledgable about the food/wine including pairings and best regions for particular vintages. The presentation of the food and service were outstanding. I would highly recommend this restaurant to anybody looking for an upscale, high quality dining experience. It has a big city, upscale steak house feel, but the staff exemplify friendy, small(er)-town hospitality.

    My ribeye was perfectly cooked. I did not care for the demiglaze because I felt that it detracted from the flavor and seasoning of the steak. I also tried the Pomme Williams and I wished I had ordered something else. In all honesty, it looked and tasted like a special from Applebee's or something along those lines. the grilled asparagus met expectations. staff was courteous, professional and helpful. i would definitely go back again.

    Canyon is my favorite restaurant in Fort Collins for steak. The atmosphere is nice and service is good. The steaks are comparable to steakhouses in big cities, maybe with less variation, no special rubs or cuts. Be aware that the oysters at Canyon come with a strong hot sauce. I found it overpowering, taking away the taste of the oysters. The cheese plate is decent.

Real treat for Fort Collins though. We go on Sundays to avoid the crowds and have seen families bring in young babies and multi-generation gatherings.

    As a food blogger, there are very few restaurants in Fort Collins where I feel like I'm going out for a haute, gourmet dinner. Where I feel that I've stepped into a special place, where the quality and creativity of the dishes are going to set themselves apart from every other restaurant in town. I can count on one hand how many restaurants we have like that in Fort Collins and The Canyon Chop House is one of them. The Canyon Chop House made its place in the Fort Collins dining scene in 2005 when Matt Schump renovated an old bank, keeping the vault and using it as a private dining room, turning the entire restaurant into a gourmand's delight. However, even in it's elegance, The Canyon Chop House embraces the laid back attitude of Fort Collins where casual dress is common and appropriate. Tucked away on a funny little corner in Old Town (off of Oak Street), large windows along the back give it an open, airy atmosphere, despite the deep, earthy hues and I especially love the open kitchen where you can watch the seamless activity that goes into making your meal. The Canyon Chop House is one of those places that is thoroughly involved in the community and local sustainability. Supporting local farms and businesses, there is a long list of places where they purchase locally grown foods. Not only are they conscientious in their purchasing, but also on the carbon footprint they leave. Their used cooking oils are recycled for bio-diesel and discarded food is given to Wolf Moon Farms for them to use as compost. On the social side, they host the monthly meetings for the Local Harvest Happy Hour Group, creating a happy hour menu featuring seasonal local ingredients. Our dinners here have been celebrations of special milestones, which brought us to The Canyon Chop House infrequently. With the spring weather warming, the patio opening and with it, a new menu that will feature more casual, lower-priced items with still the same great quality and creativity, I can see myself hanging out here a little more often than a few times a year. With delicious food like this, isn't every day a celebration?

    This is our FAVORITE dining location! We go for our special dinner nights, birthday, anniversary etc. We always receive outstanding service and superior food. Love the steaks, but the specials are wonderful too. Great local food prepared thoughtfully and carefully. Love the decor. Don't have to dress up in your Sunday best to feel comfortable. Must have the pork belly app. ummm! Reserved the vault for a family dinner, very cool.

    As others have said, this is easily the best restaurant in Fort Collins - and not just for steak. Their poultry, fish and vegetarian options have been consistently top-notch as well. The beef short-ribs and the duck/bistro steak combo are spectacular. The soups, too, tend to be exceptional. If there's a weak spot on the menu, I think it may be the sides. I'm not a big fan of truffles so the mashers weren't for me and I realized only after ordering the sauteed spinach that it could only be done so well... The atmosphere and the attitude are very laid back yet elegant - confidently chic. While the outside of the building is not particularly impressive, the interior is spot-on for rounding out the food/service/presentation/atmosphere experience. Very highly recommended.

    I have been hearing great things about the Chop House for some time and I was anxious to try it when I got back to Fort Collins. Getting there took a few trips around the block before we found it. Canyon Chop House is a beautiful restaurant set inside of an old bank. It's a very lively restaurant with the show kitchen, the decent sized crowd of diners and the servers rushing through the dining room in their jeans and black shirts. The patio was large with a wall of windows looking on to it from the restaurant but because of the cooler weather we sat inside. The restaurants private dining room is the old bank vault...very cool. The vault seemed to be an intimate setting for a private party. The service was gracious and rarely kept us waiting for anything. Looking through the folded, brown paper menu it looked to be a typical chop house with all the cuts of beef that anyone would want with their specialties being composed entrees of meat and fish. They also had a few specials that sounded good. The thing that I most liked about the menu is the list of local farmers and ranchers that they use for their menu...and it was an extensive list. The table was served sliced bread and butter that was more of a filler than anything else, seeing it's lack of flavor. We shared the beef carpaccio with truffle oil, capers, red onion and crostinis which had great flavor but was a little too warm for raw beef. Between the three of us we had the special, pan roasted halibut with a crab salsa, the trout and short ribs with gnocchi and demi. The trout was commented on as the best that they have had. As for myself and the short ribs that I had, they were delicious with a more than generous portion of demi glace. I love to drag my short ribs and potatoes through demi but the amount they served was heavy handed and made everything sit like a brick. Despite the great taste, one thing I could not believe was that the cut of meat that was served to me was a short rib...maybe a portion of brisket, inside round or top round, but not a short rib. I've never seen a short rib served in a 8oz square with no signs of a bone removed. It only makes me think that they are using a cheaper cut of meat instead of what is being sold on the menu. Yes, it was flavorful, but it seemed to me they are cutting corners. Overall, this is a beautiful restaurant with great service and a good diverse menu where the pickiest eater could find something they would come back for.

    My girlfriend and I found Canyon Chop House in one of those tourists' food guides on a visit to the Fort in 2010. The chef prepared a good pumpkin soup as an amuse bouche, then we had the crab cakes and scallops as appetizers. Both were very good and tasted fresh. For my entree I had the pork chop with a side of garlic mashed potatoes, also very flavorful and well prepared. The restaurant is in a remodeled bank, and I believe there are actually tables in the old vault. Nice decor, friendly staff and a very good selection of beers from CO and around the nation/world. This place turned out to be a really good find, a classy place to take someone special or to celebrate an occasion.

    The Canyon Chop House is a great addition to the Fort Collins restaurant scene. It's located less than a mile from old town, where most of the action is, but that's OK. The Canyon Chop House occupies a space which used to be a bank, and fortunately, they preserved some of the building's heritage -- including the vault (which you can have a nice private party dinner in). The atmosphere is subtle-trendy.. a live musician plays in the bar area (which is beautifully furnished), but doesn't dominate the area with volume... again, subtle and nice. The food is EXCELLENT -- everything we had was great, from a potato chip/cheese fondue, to venison and crab cakes, to dessert. Also, the wine list has a GREAT selection. You'll find something to compliment any meal, at whatever price point you wish. About my only knock on this place was some details around service. Perhaps the largest gaffe -- our waiter dropped some food on our table (fell off the plate). He put it on the plate and tried to serve it anyway! Also, we felt rushed to order, and we couldn't find the guy when it was time to pay. This was minor when compared to the food and the overall experience. If you enjoy going to places like Jay's, Melting Pot, Nicos, this is a great addition to the rotation.

    This is probably the best restaurant in the area. The steak is reliably good as well as the carpaccio. The sea scallops are solid, but sometimes too salty. I've tried a few of their fish options, and I only remember being disappointed once by the trout. Besides cheap ethnic food, this is one of the few places I'm willing to pay for in Fort Collins. The food is on par with good restaurants in the big cities.

    came here with my wife a few weeks back. i went with the waygu beef, for and appetizer i went with the tomato soup with grilled cheese. the tomato soup was very good, rich flavors, and brought warmth to my belly. the grilled cheese was good, but would have been better, in my opinion, perhaps with some pesto spread inside the sandwich. i wish i could eat more sometimes, as when the steak came out, i could only down about half of it. honestly, it was tougher than i was expecting, being used to filets, i thought that the marbling was nice, just a bit tough for my taste. my wife with a great plate special, a nice salad, with what i recall was pecans, vinaigrette and gorgonzola, some good fish, well crusted and light on the palate, and then a pretty darn good brownie sundae. good value on that one. overall the food was good enough to warrant a repeat visit sometime in the near future to revisit the menu and see what else they have to offer.

Beer menu is very good - some excellent Belgium beers on the list. On the flip side, the wine list could use improvement. Not very extensive. The wine list does not specify the vintage year and there were no Italian or French red wines on list which (in my humble opinion) is a requirement to be a top rated chop house. Patrons expect to be able to pair up their steaks with heavy, bold reds from various regions - not just California vineyards. Also, service was not as attentive as I would expect for a high-end restaurant. We had to ask several times for more bread and for the waitress to come back to take our wine order. Would have expected them to be more proactive. I also found the wait staff to be a little arrogant. Additionally, the wait staff needs to be better trained on how to serve wine. When I ordered a second bottle of the same wine, the waitress simply opened the bottle and poured into the same glasses (some of which were partially full from the first bottle). Would have expected her to first show me the bottle, let me taste, and then pour the second bottle into separate glasses. Why? Second bottle bould be a different vintage year than the first. Or, more important, the second bottle could have been corked and spoiled the wine from the first bottle. After she opened the second bottle and automatically starting pouring, I asked her if the wine was from the same vintage year and she replied yes. Turns out it was from the previous year which would not have been a problem as I long as I was informed. In fact, it would have been interesting to have separate glasses so I could compare the 2005 and 2006 vintages side-by-side instead of what became a cross-vintage year blend.

    We went here for taste of fort collins. It was one of only a few restaurants that actually offered a really great deal for the $25 fixed price meal. I had the best pork chop i've ever had. They use only high quality local organic ingredients. Service was excellent. Even though we were ordering only the cheapest thing on the menu. Great atmosphere and bar with excellent cheap happy hour appetizers. Awesome beer selection. Other restaurants in town can learn a lot from this place. its pricey.

    Called same day and were accommodated for a party of four, restaurant had nice atmosphere and a really cool vault. Our server(s) were great, always available but never hovering. We ordered the pork belly and tri tip apps which were both fantastic. Entrees included a filet, ribeye, and crab cakes. The filet was tender & cooked perfectly, ribeye a little tough, and crab cakes had great flavor but a bit over browned. Desert was a peanut butter mouse and chocolate ganache - excellent, and surprisingly light after a heavy meal. Despite a couple of things still overall a nice meal.

    We came for the happy hour prices and stayed for the amazing dinner. We started with draft and skewers. Delicious. Then hubby ordered rib eye whilst I ordered the petit filet. We would have taken photos but we inhaled our meals. Best 4 oz filet with mushrooms, sauce and veggies EVER. Meltiest rib eye. Food expensive and worth it for a our celebration dinner out ( we just got a house) PS Our server was awesome. Service was excellent. Food was heavenly #meatgasm

    We went there before a show at the Lincoln center. We were in a hurry and management and staff were great. They made room for 6 of us, provided rushed service and got us out in time to make the show. Keep up the good work :). The food was awesome also. Some had fish, other steak or appetizers.     Just OK... not that impressed for the price. Trout was very good and good selection of Beer and Wine Server was bad mouthing another server... unprofessional even for 7th graders Service started out well, then a long wait. We were told that the kitchen was backed up... but not many people in the place. I wanted the filet, but for $40 it was too pricey. Does not compare to places like Pappas Brothers in Dallas or Bern's in Tampa and in the same price range? Don't think we will go back

    A fancy place, definitely not cheap, good to go to with parents or for a special occasion. Went there for the small plates thing in fort collins in march, so it was a pre-done menu, I would like to go back and experince the regular menu. The fish I had was great as was the wine. The brownie for dessert was terrible though. It's in a tricky location so just keep your eyes peeled if you are looking for it.

    I would eat here weekly if I could afford it. I have gone to business group dinners as well as dinner with my husband and had excellent service. The food is beyond fabulous although you pay for that. It's a great place to take out-of-towners if you are looking to impress. We used to use Jay's Bistro for that but now we go here. Buffalo steak is to die for! It has a private party room (which is nice). A must for a business group dinner to impress

    A solid 4 stars. Good food, friendly service, and comfortable atmosphere. I would definitely recommend the tomato soup appetizer, it comes with a grilled cheese sandwich and is delicious. It is a generously sized appetizer and could be an entree if you're not too hungry. I'm not a big meat eater and appreciated (and enjoyed!) the pasta dish loaded with fresh vegetables. Fresh local food and a large beer selection. You don't have to be really dressed up, but I would recommend more than jeans and a t-shirt.

    Consistently the best restaurant in Fort Collins. I have been here many times and even proposed to my wife at Canyon Chop House. The quality of the food is beyond reproach and the service is great, which is rare in Northern Colorado. We are moving back to Phoenix very soon and coming in for a last dinner is on the checklist of things to do before we leave.

    There was nothing bad with our meal, it was just ... disappointing. Service was fine, though my steak was way overdone. I ordered it medium well and specified pink in the middle. I received something beyond well done, completely grey and dried out. The rest of the food was fine, (a bit salty but that is so common these days) so I just took the steak home for the dog, But overall, the feeling was that the restaurant has gotten tired. That women's restroom was in disrepair - the holder for the toilet paper had been ripped off the wall, and for some reason, unopened packages of paper towels were balanced on a trash bin in the cubicle (these presumably make their way out to the sink for hand drying). At the sinks, the faucets are loose. In the restaurant itself, the waitstaff wears a uniform of black pants and tops, but one person, maybe the manager, was dressed like she should have been at a biker bar, complete with keys hanging from the outside of her belt loop. I'm not usually judgmental, but it just added to the feeling that the restaurant is no longer fancy, nor even casual, but just .... can't be bothered.

    The service was so bad we ended up leaving after only having an appetizer. We waited 20min after ordering a bottle of wine only for the waitress to return and ask again what our order was. Well 15 min later she shows up with the wrong wine! Gotta wonder if it really was a mistake that a $100 bottle showed up in place of the $42 bottle I had twice ordered. Well after waiting another 10min forv our wine and having a really poor carpacchio as an appetizer we gave up. FWIW the carpacchio was tasteless. In line with several other reviews here the management response to our explanation as to why we were leaving was zilch. Not even an apology.

    We went here to get a good steak and we got just that. Yeah the waiters were wearing jeans and blah blah blah but who cares? The restaurant, food, and atmosphere is nice. I could care less if the waiters were wearing jeans!!! The garlic mashed potatoes were good and so were the mussels! It took us atleast an hour and 15 to eat here but it was a good and consistent wait between each meal. Fancy place!

Real treat for Fort Collins though. We go on Sundays to avoid the crowds and have seen families bring in young babies and multi-generation gatherings.

    I along with three friends had a horrible experience here. . Such abominable service and surly attitude cannot be justified or tolerated. Won't be back either Drinks, oh sure, well if you wait long enough that is. After 10 minutes when we could find her, we asked our server ( if I could be generous with the term ) about how long we had been sitting there waiting on our cocktails and she said it was the bartenders fault then disappeared for another 10 minutes. Oh boy, bad start: server pretty scarce and carrying a big attitude. Hey we are supposed to be in a top notch steak house here. While on the servers and staff, mind you we are in a high end, white table cloth, very expensive restaurant with nice ambiance, and all the staff wear jeans. Completely incongruent, but after the fact I realize it matches their training and attitude. There was not one customer in there in jeans. This is a special occasion place and everyone is dressed for the occasion. Steaks, oh yes we are in a chop house so we all order steaks right. Well we are now wondering where they are. We have been her well over an hour now and still no meat on the table. Ask the server again, and what do you guess she would say: oh 'sorry about that, they are all baked up in the kitchen and you meals should come out soon". Okay how soon do you think? "I don't know". Then she just walked away! Alright then, after a few more minutes, could we speak with the manager then? Manager comes and says sorry we are busy tonight. Oh, good excuse, not. Sorry your busy, perhaps that is a bad thing for your business, perhaps we should not have come in and made it worse. So could we ask why some folks who came in after us have eaten and left already? "No you are wrong they were here before you". Oh gee no they weren't, all four of us can assure you that we had ordered our food before they even sat down. Manager - "oh you all must be mistaken". Okay, getting pretty ticked off now, bad service, err poor service and now poor attitude from the server and so called manager. Well the steaks do come, but two at a time for a table of four. We say, to our companions don't wait, go ahead and start eating, don't let your steaks get cold. A few minutes later the two other steaks do come out and they are stone cold. Can we see the manager again please? And we thought the evening was bad already and could not get worse? How wrong. Steaks went back to be reheated. Can you imagine, forty dollar steaks being reheated. Oh my. Steaks came back out, companions are long done eating. What does the manager say now? Oh, we are so sorry for your bad experience tonight, so I am going to give you the employee discount on your two steaks. What? You are kidding right? Such abominable service and surly attitude cannot be justified or tolerated. Won't be back either.

    My ribeye was perfectly cooked. I did not care for the demiglaze because I felt that it detracted from the flavor and seasoning of the steak. I also tried the Pomme Williams and I wished I had ordered something else. In all honesty, it looked and tasted like a special from Applebee's or something along those lines. the grilled asparagus met expectations. staff was courteous, professional and helpful. i would definitely go back again.

    I eat here at least once a month. I own a local business and end up entertaining visiting clients at least 3-4X per month. Canyon Chop House has always been a sure thing for clients coming from more upscale environs like New York or Chicago who expect a little more than our laid back Colorado fare. Canyon Chop House is the closest thing we have in Fort Collins to a Michelin Red Guide type of restaurant. The other closest being Jay's Bistro in Old Town or Chimney Park in Windsor. Honestly, that's about it for true upscale dining in this neck of the woods - but, we're fine with that. There are better things to do than eat at fancy restaurants - like beer tours, bike rides or sightseeing! I've probably had 40 - 50 dinners with groups large and small at the Chop House and NEVER a bad experience. Actually, most come with a pleasant, unexpected surprise - a potato chip covered in caviar compliments of the chef, a foie gras cracker delivered by the wait staff, a surprise seating in the vault - stuff like that. I've noticed lately that the Chop House is doing an even better job of delivering bang for the buck. My last order of lamb was more than I could eat - but still spectacular. Everyone at the table commented on the portion size as being impressive. Honestly, I'm surprised there are bad reviews. I guess the out-of-town reviewers don't surprise me too much. We're used to waiting a little longer in Colorado, I suppose. That may irritate some. And, our laid back attitude may be considered "surly" by east coast snoots but, as Colorado restaurants go - and especially Fort Collins restaurants, it's either Canyon Chop House, Jay's Bistro or Chimney Park. As a former Torontonian, Washingtonian and Chicagoan, I've been to plenty of fancy restaurants (I just ate at French Laundry and Ad Hoc in Napa a few weeks ago), I have no problem putting Canyon at the top of the list and I don't know of anyone personally that would disagree.

    I was extremely disappointed with my dining experience at the Canyon Chop House. My steak came out less done than medium rare when I ordered medium - for a steak house, you think this would be their area of expertise. My "wedge salad" was a slab of lettuce, blue cheese dressing and 4 little bacon bits, oh and 1 cherry tomato cut in half. The "house cut steak fries" that I was told were delicious by the server, were honestly the blandest fries I've ever had. I could have had better fries from a fast food joint - and I hate fast food. I have no problem dropping $100 on a nice dinner from time to time, but when you do so and get the quality that this restaurant had to offer, it is extremely disappointing. I will not be returning!

    I took my fiancee here as a celebration of our engagement earlier in the day. When making a reservation, I had noted online that we would be celebrating our engagement. I was very impressed that the hostess and servers were aware of this and congratulated us upon introduction. We started off with some champagne, which was very dry but a good way to start off our meal. For an appetizer, we tried the seared pork belly with melted gruyere, poached egg, and hollandaise. As the server stated, this was literally a plate of breakfast for dinner and was amazing. For our salads, we each ordered the wedge salad with pancetta and blue cheese vinaigrette. My fiancee enjoyed this, but I felt the dressing was too bitter and sour. I was disappointed. In terms of entrees, my fiancee ordered braised short ribs with cheese spaetzle and sauteed greens. She couldnt stop telling me how good it was. I had a taste and was blown away by the braising liquid/sauce they used. Very flavorful but it didnt overpower the short rib. I ordered a New York Strip with peppered onion rings and a mixture of haricot verts, green olives, and garlic. The steak was cooked perfectly but there wasn't enough demi glace for me to enjoy. The sides were fantastic. One important note that really derailed our experience - the temperature outside was about 85 degrees and they decided against turning on the AC for some reason. It was brutally hot and extremely uncomfortable inside the restaurant. It really sapped some of the enjoyment out of our meal. Pros: Good, attentive service Excellent food for the most part Nice atmopshere Diverse and fun menu Cons: Temperature in the restaurant was brutal Unappetizing dressing for the salad All in all, I enjoyed my experience here and with a couple tweaks it could be the best restaurant I've been to in Northern Colorado.

    I must confess that I only go here for happy hour, but the happy hour is great. A variety of wines at happy hour prices and always some good ones. The happy hour appetizers are perfect. The fries are so good and while there's isn't a lot of variety of cheese on the cheese plate, there's a nice selection of cheese, crackers and fruit. The staff is always really friendly and the fact that this building used to be a bank and the vault is still there is pretty cool.

    UPDATED 5-3-2013 to 4 stars. (See original review below) Had to review again because our 1st experience seemed so different from others'. Have now revisited multiple times and it does seem that the initial trip was an oddity. With many visits since, meals have been consistently well-prepared with high-quality product and pleasant, attentive service from everyone (though our original waitress has not been seen since the first trip). And yes, the steaks which so disappointed us that first time, have been excellent. So, either we had a bad first experience, they made some changes, or some of both. In any event, we will return and recommend that others try the CCH. ORIGINAL REVIEW FROM 10-16-2010. Am writing this after only one experience, but felt compelled given the generally high ratings noted here. With 6 people at the table, the steaks were, quite frankly, our least impressive plates. The trout (served with scallops) was nice, as were the chicken and pasta dishes. However, the steaks just didn't make it. They appeared to be purely "open grilled" in some manner, not seared. Without searing heat, someone who wants medium rare gets nice grill "lines", but no crust and no texture to the meat. There's too much surface moisture when lower temp steaks come to the table. These weren't served on heated plates. I expect more from a high-end steak house. Get a salamander or something. Cast iron and salt work wonders. Warm your plates. Bigger item for us, was that the kitchen mis-fired on a rib-eye and sent out near-raw instead of medium rare. OK - that happens and a re-fire request isn't uncommon. Waiting 15 minutes for that re-fire is. Adding insult, we then had to request a replacement of the side dishes, which became cold while waiting 15 minutes. Not a good situation for a $40 steak. Most plates at the table were near-finished by the time the re-fire came out, but there was no reflection of the mishap or the extended delay when the check came. All items charged, full "automatic service charge" for a party of 6 (or more). Again, for a supposedly high-end place, I'd expect some recognition that the dining "experience" was muffed - even if only a dessert comp for the affected diner. Nope. Our take though, was that the near-absent server probably didn't notice. We had to flag her down more than once though the restaurant was less than half-full. MIght this have been unusual? Sure. A follow-up trip may yield better service and attention to detail. Til that happens though, it's a bit above average food with much higher than average prices. Am giving 3 stars instead of 2 because the non-steak plates were well-regarded by our diners.

    As others have said, this is easily the best restaurant in Fort Collins - and not just for steak. Their poultry, fish and vegetarian options have been consistently top-notch as well. The beef short-ribs and the duck/bistro steak combo are spectacular. The soups, too, tend to be exceptional. If there's a weak spot on the menu, I think it may be the sides. I'm not a big fan of truffles so the mashers weren't for me and I realized only after ordering the sauteed spinach that it could only be done so well... The atmosphere and the attitude are very laid back yet elegant - confidently chic. While the outside of the building is not particularly impressive, the interior is spot-on for rounding out the food/service/presentation/atmosphere experience. Very highly recommended.

    We went here for taste of fort collins. It was one of only a few restaurants that actually offered a really great deal for the $25 fixed price meal. I had the best pork chop i've ever had. They use only high quality local organic ingredients. Service was excellent. Even though we were ordering only the cheapest thing on the menu. Great atmosphere and bar with excellent cheap happy hour appetizers. Awesome beer selection. Other restaurants in town can learn a lot from this place. its pricey.

    This is our FAVORITE dining location! We go for our special dinner nights, birthday, anniversary etc. We always receive outstanding service and superior food. Love the steaks, but the specials are wonderful too. Great local food prepared thoughtfully and carefully. Love the decor. Don't have to dress up in your Sunday best to feel comfortable. Must have the pork belly app. ummm! Reserved the vault for a family dinner, very cool.

    The Canyon Chop House is a great addition to the Fort Collins restaurant scene. It's located less than a mile from old town, where most of the action is, but that's OK. The Canyon Chop House occupies a space which used to be a bank, and fortunately, they preserved some of the building's heritage -- including the vault (which you can have a nice private party dinner in). The atmosphere is subtle-trendy.. a live musician plays in the bar area (which is beautifully furnished), but doesn't dominate the area with volume... again, subtle and nice. The food is EXCELLENT -- everything we had was great, from a potato chip/cheese fondue, to venison and crab cakes, to dessert. Also, the wine list has a GREAT selection. You'll find something to compliment any meal, at whatever price point you wish. About my only knock on this place was some details around service. Perhaps the largest gaffe -- our waiter dropped some food on our table (fell off the plate). He put it on the plate and tried to serve it anyway! Also, we felt rushed to order, and we couldn't find the guy when it was time to pay. This was minor when compared to the food and the overall experience. If you enjoy going to places like Jay's, Melting Pot, Nicos, this is a great addition to the rotation.

    My husband and I were in Fort Collins celebrating our wedding anniversary and spending time with family. After researching area restaurants, we settled on Canyon Chop House for our anniversary dinner based on the appetizing menu and the reviews. Although the building is hard to find (we had to turn around several times), the interior is quite lovely and we appreciated the old bank vault door they had retained. Our server was friendly, though slow. The beer list was fairly extensive, which we appreciated, but that's not unusual in Colorado. We started with drinks and the seared pork belly appetizer. The seared pork belly was quite tasty - a good combination of sweet and salty with bitter greens and creamy cheese. Between courses, I excused myself and found that the bathrooms were filthy. I was really surprised as the rest of the restaurant was clean and tidy. After that, my husband pointed out that the kitchen staff does not wear gloves when working with raw meat nor did we notice the cooks washing their hands. As a chef, he notices these things, but we didn't find it too concerning at the time (maybe the beer clouded our judgement...) as the restaurant was so well-reviewed and seemed to be of high quality. My husband ordered the rack of lamb with a wedge salad and I had the prosciutto-wrapped chicken with a mixed-green salad. We both greatly enjoyed our dinners and had a lovely time. Unfortunately, the feeling didn't last long. Less than two hours later, my husband became violently ill. We were planning to drive home the next day (a 10 hour trip), but it became very clear that he would be unable to travel. The next morning he was diagnosed with food poisoning induced gastroenteritis. Needless to say, we won't be back.

    I wanted to like this place. I really, really did. As many have said, it's in a beautiful old bank, and the ambiance is quite nice. They get two stars, though; my major issues with our visit: * OMG SALT! Too much salt in the salad dressings. Too much salt in the mashed potatoes. Too much salt in the demi-glace. Too much salt usually means you're trying to cover poor quality food. I don't really know what's going on here, because the steak without the demi-glace was flavorful. (Lamentably, the demi-glace was _so_ salty, I'd argue it actually ruined the filet I had.) * The service itself was acceptable, but the servers' knowledge of the food/menu was lacking. We ordered the cheese plate as an appetizer, and the server dropped it off without letting us know what the cheeses were. We could've been eating Velveta for all we knew. Also, they didn't provide silverware (or plates, now that I think about it) for the cheese platter, so we were using our butter-covered bread knives to spread the cheese on the crackers, and eating it on existing dirty dishes that were at the table. * The bar service (or service-from-the-bar-to-the-table) was slow. We went on a slow evening (dining room wasn't even close to full), and had to wait to put cocktail orders in, and get them. When dinner came, I had to ask where the wine was while the food got cold. This is annoying for me, but totally insane from the standpoint of a restauranteur. (Protip: this inefficiency is where you're leaving money the table! In a similar vein, requiring customers to ask for the dessert drink menu [with port, scotch, dessert drinks, etc.] is also leaving money on the table.) I'll probably try to give this place another chance, but for the price and the hyped up reputation, our visit was a disappointment.

    Went here tonight based on a recommendation. It is now the top restaurant I've visited in Fort Collins. I was here on business, solo, thus I ate at the bar. Ordered the half-dozen oyster starter....excellent! Had the Colorado trout/scallop entree (menu staple). It was the bartender's (Matt) suggestion ---- phenomenal! They have a great wine list as well.....the staff (especially Matt) seemed to very knowledgable about the food/wine including pairings and best regions for particular vintages. The presentation of the food and service were outstanding. I would highly recommend this restaurant to anybody looking for an upscale, high quality dining experience. It has a big city, upscale steak house feel, but the staff exemplify friendy, small(er)-town hospitality.

    The service was good. We sat in the back patio and the weather was great. Our server was great but... I ordered the seared duck breast and duck confit leg. I love duck breast. I get it everywhere. Mine came with a breast well done. I assumed it would be red inside because that's how it's done normally. It was gray and well done. I asked if it was always cooked well done. The server who was very professional said its not usually that way and offered to have it redone. My companion in the meantime ate his meal while I watched. When my plate came, it looked exactly the same. The server insisted the duck was a lot less "done" than it looked. Really??! It was still gray. By this time my companion had finished his meal and I still couldn't eat mine so we settled up. I told the server that it was still too overdone for me. We got our bill and he gave me the cost of a wine on the house. I enjoyed my happy hour wine. What I did not enjoy, and did not eat, was my entree. He should have taken that, not my wine off the bill. I paid just about $28 for a duck entree I never ate. Shocking. If you go here to the canyon chophouse do not get the food. Drinks only, at the happy hour price. And seriously, don't order the overdone gray duck. Ick. Soft enough but duck breast well done is a serious food crime. And for god sakes call it braised or poached duck breast not seared duck breast. Serious food crime to serve gray duck breast. Update: this is the response I received from the restaurant. RUDE RUDE. Hello Jill, I am terribly sorry that you were unsatisfied with your meal. I actually did check the first duck with my head chef as it came back the first time. The $9 up charge for the lobster mashed potatoes (one of our most popular sides) is in keeping with market price for the ingredients, and it is not our policy to take food off of a bill if it has already been replaced. I am only authorized to discount an item if it does not meet customer satisfaction if there is no way to replace the item and it is returned to us unfinished so I can count it as a loss, but the entire meal was prepared twice. We all regret that you were not happy with your experience, since my chefs take great pride in the preparation of our menu. I, personally, have had overcooked duck before but never here, and I'm fairly certain that even then it wasn't "inedible". In over 20 years of customer service, I am always sad to find that despite our best efforts, we can't always please everyone.     The Canyon Chop House is definitely the fanciest restaurant in town. The decor is upscale and the vault is awesome. The restaurant is divided up into a few rooms, which is nice since it keeps the noise level down compared to a loud place like Austin's. The service is outstanding. I went for Great Plates - a great way to try the restaurant without breaking the bank. I had the prosciutto-wrapped chicken breast that was mind-blowing. The salty crust of the prosciutto and the sweet reduction sauce drizzled on was like heaven in a bite. The bleu cheese polenta was a bit strong for me, but I'm not a huge bleu cheese fan in the first place. The Rocky Mountain trout was expertly cooked and delicious as well. A unique side on the menu I hadn't seen before is the pomme williams. It's mashed potatoes mixed with gorgonzola, hand-shaped into a pear shape, breaded and fried. It sounded very bizarre - but believe me, it's glorious. The desserts were equally amazing; the brownie and peanut butter ice cream was expertly portioned to work perfectly together. The strawberry sorbet was creamy and delicious. A big downside was the selection of white wines - I've seen better wine lists at many of the lower-class restaurants in town. The white wines were all domestic. No German Riesling, guys - really? The wines weren't quite Kendall Jackson, but needless to say it's the kind of stuff that's readily available at most liquor stores in town. Not up to par with the class of the restaurant. I didn't check out the red wines, so maybe that list was more impressive. The price is a bit prohibitive, I can't imagine paying $40 for a filet more than once or twice a year. Foodies might attest that price is no object for the best of the best, though. I highly recommend checking them out March 1-14 for Great Plates!

    This has become one of my favorite restaurants in Fort Collins. If you go, you MUST have the Sauteed Beef Tenderloin Tips, Hazel Dell Mushrooms with Crispy Gorgonzola Potato Cake and Port Demi, it will literally melt in your mouth. As far as entrees, I haven't tried anything beyond the steaks but I've not gone wrong with any of my choices so why change it up. I'm assuming their specialty dishes are just as incredible; however, I can't stay away from the steaks when I'm there. If you are in Fort Collins for any reason whether it be business or pleasure, you must try Canyon Chop House.

    We dined here with friends on Sunday, 4/19/15. The service here is wonderful - helpful, friendly, attentive without being annoying. The food, alas, was only mediocre and not served more than lukewarm. Our companions had recommended this restaurant but I could tell by their expressions they were disappointed. There were very few customers in the restaurant and, perhaps, that was the problem with the kitchen staff. Just not that interested in doing a great job on a slow night. The wine list is quite good but they were out of the one wine I wanted - an Educated Guess cabernet. Also, no espresso which I thought was very odd in a beef-centric restaurant. I believe we'll try it again someday because the potential to be very good is there - - just not this past Sunday. We very much enjoyed the quiet adult atmosphere.

    Absolutely my favorite special occasion place in Fort Collins. I typically get the filet but everything else is just as good. All local meats, vegetables and brews. I would love to dine in the vault someday. I can't think of anything negative to say about this place after a dozen visits.

    We are visiting Fort Collins from Pittsburgh. It was my husbands 30th birthday so we decided to check out the Canyon Chop House for a nice dinner. It was overall a wonderful experience. Our steaks were amazing and perfectly cooked. The waitress was so nice and friendly. The ambiance is nice - although it seems like there might be some "cooler" restaurants in Fort Collins. But for a nice steak dinner, I would definitely recommend this restaurant.

    We were at the Chop House celebrating our anniversary. I had been once before and remember it being very good. We made the reservation through OpenTable and mentioned that it was a special occasion. They gave us a big booth right next to infamous vault door - so cool. Our waitress was very helpful with suggesting some wine for us, but wasn't paying great attention apparently since she had to return to the table a couple times for us to remind her what we ordered. No biggie...she was very friendly and the food ended up all being correct. Best part of the meal?? Our appetizer: truffled scallops with beets. Amazing. I almost wish I had gotten that for my entree. Highly recommended. I ordered the larger filet with sautéed spinach and garlic mashed potatoes. I thought everything was very tasty, my boyfriend didn't love the filet but admitted it was good. He got the lamb shank which was very tender and flavorful. While everything was good, it was also very expensive (which we were prepared for)...it's just probably not my favorite place in town for a "big splurge" for a nicer meal.

    As a food blogger, there are very few restaurants in Fort Collins where I feel like I'm going out for a haute, gourmet dinner. Where I feel that I've stepped into a special place, where the quality and creativity of the dishes are going to set themselves apart from every other restaurant in town. I can count on one hand how many restaurants we have like that in Fort Collins and The Canyon Chop House is one of them. The Canyon Chop House made its place in the Fort Collins dining scene in 2005 when Matt Schump renovated an old bank, keeping the vault and using it as a private dining room, turning the entire restaurant into a gourmand's delight. However, even in it's elegance, The Canyon Chop House embraces the laid back attitude of Fort Collins where casual dress is common and appropriate. Tucked away on a funny little corner in Old Town (off of Oak Street), large windows along the back give it an open, airy atmosphere, despite the deep, earthy hues and I especially love the open kitchen where you can watch the seamless activity that goes into making your meal. The Canyon Chop House is one of those places that is thoroughly involved in the community and local sustainability. Supporting local farms and businesses, there is a long list of places where they purchase locally grown foods. Not only are they conscientious in their purchasing, but also on the carbon footprint they leave. Their used cooking oils are recycled for bio-diesel and discarded food is given to Wolf Moon Farms for them to use as compost. On the social side, they host the monthly meetings for the Local Harvest Happy Hour Group, creating a happy hour menu featuring seasonal local ingredients. Our dinners here have been celebrations of special milestones, which brought us to The Canyon Chop House infrequently. With the spring weather warming, the patio opening and with it, a new menu that will feature more casual, lower-priced items with still the same great quality and creativity, I can see myself hanging out here a little more often than a few times a year. With delicious food like this, isn't every day a celebration?

    I read all of the reviews but wanted to experience and input a more current one. In the door, I was greeted quickly by waitress headed to pick up orders, but there was no hostess present. This restaurant has upscale, business-people setting in business park area but dress is casual. As such, tables were covered with white linen with butcher-block paper over the top. Now, I know why they do this, but paper over linen tells me management wants a cheap cleaning fix. I felt this was rather insulting, as if guests were "expected" to be pigs and make a mess. Paper on the table is best reserved for crab houses on the East Coast or BBQ places, where the intent is to make a mess. For the drink, I chose the waitress-recommended local brew Funkwerks Brewery "Cezanne". It was delicious, medium ale that would pair well with much on the menu if you didn't choose wine. Wine menu was extensive, but each type only offered one or two selections via glass, the rest by bottle. Pricing was pretty high. Some brands were quite pricey versus retail. Bread service was timely, but only offered sliced baguette. In contrast, most upscale steak and chop houses give you a selection. The baguette was definitely day-old, crusty, and chewy. Another waiter came by with a very small sample of pork cutlet with strawberry and balsamic reduction. It was a small sample, barely 1 ounce size, and although thoughtful, seemed out of place and feeble attempt at sampling. The pre-entrée salad was mixed greens with light balsamic reduction which was small but fresh and tasty. For the main course, I chose the Double-Cut Pork cutlet (this IS a Chop House so it SHOULD be good). This three-inch, bone-in cut is typically difficult to cook right without becoming dry and rubbery. My portion was tender and juicy with center slightly pink. Most people concerned with uncooked pork might have been worried but I wasn't. It was served demi-glace with seared greens and house-made onion rings. The seared greens were delicious and good addition. However, the oversized portion of French-fried onion rings was way over the top. The portion literally covered half the plate. I see now why other reviewers commented on this. The only contribution the onion rings added was a greasy, fried mess. I did mention to the waitress that onion rings were a bad pairing. This is a upscale steakhouse, not a Outback or Road House. My overall rating is four-stars, based upon ambience, quality of food, and quality of service. Service was very attentive in a nice, relaxed and overall quiet environment and pricing was in the range expected (Fort Collins dining is not cheap). A large table of British businessmen nearby carried on a spirited conversation but the volume wasn't obtrusive. I was not impressed by the choice of sides, limited bread service, and small, curious chef sample. Another downgrade was the butcher paper covering. It also seemed wait staff made puzzling choices. One waiter bussing a table wrestled with all the plates, glasses, and paper covering rolled into an almost unmanageable package before heading back to the kitchen. It was slightly scary calamity knowing one false move would have spilled the entire mess on customers nearby. It would have been better for him to make two trips. Being away from the downtown scene, this restaurant CAN and SHOULD do more to compete with College Avenue locations like Kitchen and Rare which do their job well. Adding more up-scale sides like sautéed Shitake or Black Truffle mushrooms, uncommon vegetables, wild grains, or spicy side dishes like Chutney will make these main courses STAND OUT and drive more customers their direction. Hey Management...here's an idea...how awesome would a Hatch Green Chile Mole be with the Pork Cutlet? Now That's a good pairing!

    This is typically our defacto places for celebrating my wife or mine birthdays or special date nights. I think it used to be 5 stars, but not jumping out as it used to be several years ago. Real treat for Fort Collins though. We go on Sundays to avoid the crowds and have seen families bring in young babies and multi-generation gatherings.

    Without a doubt, the best restaurant in Fort Collins. Now, I don't believe this is the best steakhouse in the world - far from it - but, as I said the best dinner option in Fort Collins. Great service. Beautifully designed. Stellar ambiance. And, a surprisingly relaxed setting. I won't bore you with the details of my meal, but... if you feel like spending a bit of money, and don't feel like driving out of FoCo, this is for you.

    Canyon is my favorite restaurant in Fort Collins for steak. The atmosphere is nice and service is good. The steaks are comparable to steakhouses in big cities, maybe with less variation, no special rubs or cuts. Be aware that the oysters at Canyon come with a strong hot sauce. I found it overpowering, taking away the taste of the oysters. The cheese plate is decent.

    I must confess that I only go here for happy hour, but the happy hour is great. A variety of wines at happy hour prices and always some good ones. The happy hour appetizers are perfect. The fries are so good and while there's isn't a lot of variety of cheese on the cheese plate, there's a nice selection of cheese, crackers and fruit. The staff is always really friendly and the fact that this building used to be a bank and the vault is still there is pretty cool.

    This is our FAVORITE dining location! We go for our special dinner nights, birthday, anniversary etc. We always receive outstanding service and superior food. Love the steaks, but the specials are wonderful too. Great local food prepared thoughtfully and carefully. Love the decor. Don't have to dress up in your Sunday best to feel comfortable. Must have the pork belly app. ummm! Reserved the vault for a family dinner, very cool.

    The Canyon Chop House is a great addition to the Fort Collins restaurant scene. It's located less than a mile from old town, where most of the action is, but that's OK. The Canyon Chop House occupies a space which used to be a bank, and fortunately, they preserved some of the building's heritage -- including the vault (which you can have a nice private party dinner in). The atmosphere is subtle-trendy.. a live musician plays in the bar area (which is beautifully furnished), but doesn't dominate the area with volume... again, subtle and nice. The food is EXCELLENT -- everything we had was great, from a potato chip/cheese fondue, to venison and crab cakes, to dessert. Also, the wine list has a GREAT selection. You'll find something to compliment any meal, at whatever price point you wish. About my only knock on this place was some details around service. Perhaps the largest gaffe -- our waiter dropped some food on our table (fell off the plate). He put it on the plate and tried to serve it anyway! Also, we felt rushed to order, and we couldn't find the guy when it was time to pay. This was minor when compared to the food and the overall experience. If you enjoy going to places like Jay's, Melting Pot, Nicos, this is a great addition to the rotation.

    This is probably the best restaurant in the area. The steak is reliably good as well as the carpaccio. The sea scallops are solid, but sometimes too salty. I've tried a few of their fish options, and I only remember being disappointed once by the trout. Besides cheap ethnic food, this is one of the few places I'm willing to pay for in Fort Collins. The food is on par with good restaurants in the big cities.

    UPDATED 5-3-2013 to 4 stars. (See original review below) Had to review again because our 1st experience seemed so different from others'. Have now revisited multiple times and it does seem that the initial trip was an oddity. With many visits since, meals have been consistently well-prepared with high-quality product and pleasant, attentive service from everyone (though our original waitress has not been seen since the first trip). And yes, the steaks which so disappointed us that first time, have been excellent. So, either we had a bad first experience, they made some changes, or some of both. In any event, we will return and recommend that others try the CCH. ORIGINAL REVIEW FROM 10-16-2010. Am writing this after only one experience, but felt compelled given the generally high ratings noted here. With 6 people at the table, the steaks were, quite frankly, our least impressive plates. The trout (served with scallops) was nice, as were the chicken and pasta dishes. However, the steaks just didn't make it. They appeared to be purely "open grilled" in some manner, not seared. Without searing heat, someone who wants medium rare gets nice grill "lines", but no crust and no texture to the meat. There's too much surface moisture when lower temp steaks come to the table. These weren't served on heated plates. I expect more from a high-end steak house. Get a salamander or something. Cast iron and salt work wonders. Warm your plates. Bigger item for us, was that the kitchen mis-fired on a rib-eye and sent out near-raw instead of medium rare. OK - that happens and a re-fire request isn't uncommon. Waiting 15 minutes for that re-fire is. Adding insult, we then had to request a replacement of the side dishes, which became cold while waiting 15 minutes. Not a good situation for a $40 steak. Most plates at the table were near-finished by the time the re-fire came out, but there was no reflection of the mishap or the extended delay when the check came. All items charged, full "automatic service charge" for a party of 6 (or more). Again, for a supposedly high-end place, I'd expect some recognition that the dining "experience" was muffed - even if only a dessert comp for the affected diner. Nope. Our take though, was that the near-absent server probably didn't notice. We had to flag her down more than once though the restaurant was less than half-full. MIght this have been unusual? Sure. A follow-up trip may yield better service and attention to detail. Til that happens though, it's a bit above average food with much higher than average prices. Am giving 3 stars instead of 2 because the non-steak plates were well-regarded by our diners.

    As others have said, this is easily the best restaurant in Fort Collins - and not just for steak. Their poultry, fish and vegetarian options have been consistently top-notch as well. The beef short-ribs and the duck/bistro steak combo are spectacular. The soups, too, tend to be exceptional. If there's a weak spot on the menu, I think it may be the sides. I'm not a big fan of truffles so the mashers weren't for me and I realized only after ordering the sauteed spinach that it could only be done so well... The atmosphere and the attitude are very laid back yet elegant - confidently chic. While the outside of the building is not particularly impressive, the interior is spot-on for rounding out the food/service/presentation/atmosphere experience. Very highly recommended.

    I have been hearing great things about the Chop House for some time and I was anxious to try it when I got back to Fort Collins. Getting there took a few trips around the block before we found it. Canyon Chop House is a beautiful restaurant set inside of an old bank. It's a very lively restaurant with the show kitchen, the decent sized crowd of diners and the servers rushing through the dining room in their jeans and black shirts. The patio was large with a wall of windows looking on to it from the restaurant but because of the cooler weather we sat inside. The restaurants private dining room is the old bank vault...very cool. The vault seemed to be an intimate setting for a private party. The service was gracious and rarely kept us waiting for anything. Looking through the folded, brown paper menu it looked to be a typical chop house with all the cuts of beef that anyone would want with their specialties being composed entrees of meat and fish. They also had a few specials that sounded good. The thing that I most liked about the menu is the list of local farmers and ranchers that they use for their menu...and it was an extensive list. The table was served sliced bread and butter that was more of a filler than anything else, seeing it's lack of flavor. We shared the beef carpaccio with truffle oil, capers, red onion and crostinis which had great flavor but was a little too warm for raw beef. Between the three of us we had the special, pan roasted halibut with a crab salsa, the trout and short ribs with gnocchi and demi. The trout was commented on as the best that they have had. As for myself and the short ribs that I had, they were delicious with a more than generous portion of demi glace. I love to drag my short ribs and potatoes through demi but the amount they served was heavy handed and made everything sit like a brick. Despite the great taste, one thing I could not believe was that the cut of meat that was served to me was a short rib...maybe a portion of brisket, inside round or top round, but not a short rib. I've never seen a short rib served in a 8oz square with no signs of a bone removed. It only makes me think that they are using a cheaper cut of meat instead of what is being sold on the menu. Yes, it was flavorful, but it seemed to me they are cutting corners. Overall, this is a beautiful restaurant with great service and a good diverse menu where the pickiest eater could find something they would come back for.

    My girlfriend and I found Canyon Chop House in one of those tourists' food guides on a visit to the Fort in 2010. The chef prepared a good pumpkin soup as an amuse bouche, then we had the crab cakes and scallops as appetizers. Both were very good and tasted fresh. For my entree I had the pork chop with a side of garlic mashed potatoes, also very flavorful and well prepared. The restaurant is in a remodeled bank, and I believe there are actually tables in the old vault. Nice decor, friendly staff and a very good selection of beers from CO and around the nation/world. This place turned out to be a really good find, a classy place to take someone special or to celebrate an occasion.

    came here with my wife a few weeks back. i went with the waygu beef, for and appetizer i went with the tomato soup with grilled cheese. the tomato soup was very good, rich flavors, and brought warmth to my belly. the grilled cheese was good, but would have been better, in my opinion, perhaps with some pesto spread inside the sandwich. i wish i could eat more sometimes, as when the steak came out, i could only down about half of it. honestly, it was tougher than i was expecting, being used to filets, i thought that the marbling was nice, just a bit tough for my taste. my wife with a great plate special, a nice salad, with what i recall was pecans, vinaigrette and gorgonzola, some good fish, well crusted and light on the palate, and then a pretty darn good brownie sundae. good value on that one. overall the food was good enough to warrant a repeat visit sometime in the near future to revisit the menu and see what else they have to offer.

    A fancy place, definitely not cheap, good to go to with parents or for a special occasion. Went there for the small plates thing in fort collins in march, so it was a pre-done menu, I would like to go back and experince the regular menu. The fish I had was great as was the wine. The brownie for dessert was terrible though. It's in a tricky location so just keep your eyes peeled if you are looking for it.

    I would eat here weekly if I could afford it. I have gone to business group dinners as well as dinner with my husband and had excellent service. The food is beyond fabulous although you pay for that. It's a great place to take out-of-towners if you are looking to impress. We used to use Jay's Bistro for that but now we go here. Buffalo steak is to die for! It has a private party room (which is nice). A must for a business group dinner to impress

    A solid 4 stars. Good food, friendly service, and comfortable atmosphere. I would definitely recommend the tomato soup appetizer, it comes with a grilled cheese sandwich and is delicious. It is a generously sized appetizer and could be an entree if you're not too hungry. I'm not a big meat eater and appreciated (and enjoyed!) the pasta dish loaded with fresh vegetables. Fresh local food and a large beer selection. You don't have to be really dressed up, but I would recommend more than jeans and a t-shirt.

    Filets are excellent! Cooked and seasoned perfectly! I liked the fact that the entries include 2 side dishes and a salad. Yukon mashed potatoes and wedge salad were very tasty. Beer menu is very good - some excellent Belgium beers on the list. On the flip side, the wine list could use improvement. Not very extensive. The wine list does not specify the vintage year and there were no Italian or French red wines on list which (in my humble opinion) is a requirement to be a top rated chop house. Patrons expect to be able to pair up their steaks with heavy, bold reds from various regions - not just California vineyards. Also, service was not as attentive as I would expect for a high-end restaurant. We had to ask several times for more bread and for the waitress to come back to take our wine order. Would have expected them to be more proactive. I also found the wait staff to be a little arrogant. Additionally, the wait staff needs to be better trained on how to serve wine. When I ordered a second bottle of the same wine, the waitress simply opened the bottle and poured into the same glasses (some of which were partially full from the first bottle). Would have expected her to first show me the bottle, let me taste, and then pour the second bottle into separate glasses. Why? Second bottle bould be a different vintage year than the first. Or, more important, the second bottle could have been corked and spoiled the wine from the first bottle. After she opened the second bottle and automatically starting pouring, I asked her if the wine was from the same vintage year and she replied yes. Turns out it was from the previous year which would not have been a problem as I long as I was informed. In fact, it would have been interesting to have separate glasses so I could compare the 2005 and 2006 vintages side-by-side instead of what became a cross-vintage year blend.

    We went here for taste of fort collins. It was one of only a few restaurants that actually offered a really great deal for the $25 fixed price meal. I had the best pork chop i've ever had. They use only high quality local organic ingredients. Service was excellent. Even though we were ordering only the cheapest thing on the menu. Great atmosphere and bar with excellent cheap happy hour appetizers. Awesome beer selection. Other restaurants in town can learn a lot from this place. its pricey.

    Called same day and were accommodated for a party of four, restaurant had nice atmosphere and a really cool vault. Our server(s) were great, always available but never hovering. We ordered the pork belly and tri tip apps which were both fantastic. Entrees included a filet, ribeye, and crab cakes. The filet was tender & cooked perfectly, ribeye a little tough, and crab cakes had great flavor but a bit over browned. Desert was a peanut butter mouse and chocolate ganache - excellent, and surprisingly light after a heavy meal. Despite a couple of things still overall a nice meal.

    We came for the happy hour prices and stayed for the amazing dinner. We started with draft and skewers. Delicious. Then hubby ordered rib eye whilst I ordered the petit filet. We would have taken photos but we inhaled our meals. Best 4 oz filet with mushrooms, sauce and veggies EVER. Meltiest rib eye. The restaurant is kind of off to the side in what looked to be an office building, but don't let that fool you. It's actually pretty nice inside. Anyways, we had to wait a bit for our table, since the people before us paid but decided to hang out and talk an extra half hour or so. Several people offered us drinks, but we just decided to sit on the couch and wait. Finally at our table, we ordered drinks and appetizers. They have a decent wine and beer selection, and a couple choices for hard cider. We also got the cheese plate and beef tips for appetizers. I loved the cheeses and nuts on the plate, and they use local sources! Great goat cheese. I ordered the braised short ribs, and my parents got the lamb dish and the t bone steak. It was all really good, but I was really full and had no room for dessert :( I wonder if I can go back just for dessert? We used a groupon and the yelp check in deal, so we ended up also getting 25% off our first round of drinks! All in all, great experience, good service, yummy food.

Why does my $30 steak need onion rings or a wedge of lettuce?! If anyone there reads these reviews, please look up the menu for Gaucho Grill, Picadilly, London, UK. That place sets the standard you guys could really learn from.

    This place keeps disappointing. I got engaged here and thought I would take my wife again for her birthday. Bad decision. No greeter at the door. Had a reservation and they were supposed to dress up the table for my wife's birthday. That didn't happen. After being sat we waited 7 minutes before being greeted. Got my salad wrong and then took it back and forgot to replace it. I asked for drink recommendations. He had none. Asked about the buffalo ribeye and he says he usually only does the filet. The bread was also cold and seems very unappetizing. We ended up leaving early. In short, I have had better experiences at Chillis than this. They owe me big time.

    We dined here with friends on Sunday, 4/19/15. The service here is wonderful - helpful, friendly, attentive without being annoying. The food, alas, was only mediocre and not served more than lukewarm. Our companions had recommended this restaurant but I could tell by their expressions they were disappointed. There were very few customers in the restaurant and, perhaps, that was the problem with the kitchen staff. Just not that interested in doing a great job on a slow night. The wine list is quite good but they were out of the one wine I wanted - an Educated Guess cabernet. Also, no espresso which I thought was very odd in a beef-centric restaurant. I believe we'll try it again someday because the potential to be very good is there - - just not this past Sunday. We very much enjoyed the quiet adult atmosphere.

    We are visiting Fort Collins from Pittsburgh. It was my husbands 30th birthday so we decided to check out the Canyon Chop House for a nice dinner. It was overall a wonderful experience. Our steaks were amazing and perfectly cooked. The waitress was so nice and friendly. The ambiance is nice - although it seems like there might be some "cooler" restaurants in Fort Collins. But for a nice steak dinner, I would definitely recommend this restaurant.

    We were at the Chop House celebrating our anniversary. I had been once before and remember it being very good. We made the reservation through OpenTable and mentioned that it was a special occasion. They gave us a big booth right next to infamous vault door - so cool. Our waitress was very helpful with suggesting some wine for us, but wasn't paying great attention apparently since she had to return to the table a couple times for us to remind her what we ordered. No biggie...she was very friendly and the food ended up all being correct. Best part of the meal?? Our appetizer: truffled scallops with beets. Amazing. I almost wish I had gotten that for my entree. Highly recommended. I ordered the larger filet with sautéed spinach and garlic mashed potatoes. I thought everything was very tasty, my boyfriend didn't love the filet but admitted it was good. He got the lamb shank which was very tender and flavorful. While everything was good, it was also very expensive (which we were prepared for)...it's just probably not my favorite place in town for a "big splurge" for a nicer meal.

    Consistently the best restaurant in Fort Collins. I have been here many times and even proposed to my wife at Canyon Chop House. The quality of the food is beyond reproach and the service is great, which is rare in Northern Colorado. We are moving back to Phoenix very soon and coming in for a last dinner is on the checklist of things to do before we leave.

    I along with three friends had a horrible experience here. . Such abominable service and surly attitude cannot be justified or tolerated. Won't be back either Drinks, oh sure, well if you wait long enough that is. After 10 minutes when we could find her, we asked our server ( if I could be generous with the term ) about how long we had been sitting there waiting on our cocktails and she said it was the bartenders fault then disappeared for another 10 minutes. Oh boy, bad start: server pretty scarce and carrying a big attitude. Hey we are supposed to be in a top notch steak house here. While on the servers and staff, mind you we are in a high end, white table cloth, very expensive restaurant with nice ambiance, and all the staff wear jeans. Completely incongruent, but after the fact I realize it matches their training and attitude. There was not one customer in there in jeans. This is a special occasion place and everyone is dressed for the occasion. Steaks, oh yes we are in a chop house so we all order steaks right. Well we are now wondering where they are. We have been her well over an hour now and still no meat on the table. Ask the server again, and what do you guess she would say: oh 'sorry about that, they are all baked up in the kitchen and you meals should come out soon". Okay how soon do you think? "I don't know". Then she just walked away! Alright then, after a few more minutes, could we speak with the manager then? Manager comes and says sorry we are busy tonight. Oh, good excuse, not. Sorry your busy, perhaps that is a bad thing for your business, perhaps we should not have come in and made it worse. So could we ask why some folks who came in after us have eaten and left already? "No you are wrong they were here before you". Oh gee no they weren't, all four of us can assure you that we had ordered our food before they even sat down. Manager - "oh you all must be mistaken". Okay, getting pretty ticked off now, bad service, err poor service and now poor attitude from the server and so called manager. Well the steaks do come, but two at a time for a table of four. We say, to our companions don't wait, go ahead and start eating, don't let your steaks get cold. A few minutes later the two other steaks do come out and they are stone cold. Can we see the manager again please? And we thought the evening was bad already and could not get worse? How wrong. Steaks went back to be reheated. Can you imagine, forty dollar steaks being reheated. Oh my. Steaks came back out, companions are long done eating. What does the manager say now? Oh, we are so sorry for your bad experience tonight, so I am going to give you the employee discount on your two steaks. What? You are kidding right? Such abominable service and surly attitude cannot be justified or tolerated. Won't be back either.

    Very poor quality all around which is unlike anything I've experienced here. Unsupervised staff? No management. Cooks (no chef on sight) poor bebaviors.

    I read all of the reviews but wanted to experience and input a more current one. In the door, I was greeted quickly by waitress headed to pick up orders, but there was no hostess present. This restaurant has upscale, business-people setting in business park area but dress is casual. As such, tables were covered with white linen with butcher-block paper over the top. Now, I know why they do this, but paper over linen tells me management wants a cheap cleaning fix. I felt this was rather insulting, as if guests were "expected" to be pigs and make a mess. Paper on the table is best reserved for crab houses on the East Coast or BBQ places, where the intent is to make a mess. For the drink, I chose the waitress-recommended local brew Funkwerks Brewery "Cezanne". It was delicious, medium ale that would pair well with much on the menu if you didn't choose wine. Wine menu was extensive, but each type only offered one or two selections via glass, the rest by bottle. Pricing was pretty high. Some brands were quite pricey versus retail. Bread service was timely, but only offered sliced baguette. In contrast, most upscale steak and chop houses give you a selection. The baguette was definitely day-old, crusty, and chewy. Another waiter came by with a very small sample of pork cutlet with strawberry and balsamic reduction. It was a small sample, barely 1 ounce size, and although thoughtful, seemed out of place and feeble attempt at sampling. The pre-entrée salad was mixed greens with light balsamic reduction which was small but fresh and tasty. For the main course, I chose the Double-Cut Pork cutlet (this IS a Chop House so it SHOULD be good). This three-inch, bone-in cut is typically difficult to cook right without becoming dry and rubbery. My portion was tender and juicy with center slightly pink. Most people concerned with uncooked pork might have been worried but I wasn't. It was served demi-glace with seared greens and house-made onion rings. The seared greens were delicious and good addition. However, the oversized portion of French-fried onion rings was way over the top. The portion literally covered half the plate. I see now why other reviewers commented on this. The only contribution the onion rings added was a greasy, fried mess. I did mention to the waitress that onion rings were a bad pairing. This is a upscale steakhouse, not a Outback or Road House. My overall rating is four-stars, based upon ambience, quality of food, and quality of service. Service was very attentive in a nice, relaxed and overall quiet environment and pricing was in the range expected (Fort Collins dining is not cheap). A large table of British businessmen nearby carried on a spirited conversation but the volume wasn't obtrusive. I was not impressed by the choice of sides, limited bread service, and small, curious chef sample. Another downgrade was the butcher paper covering. It also seemed wait staff made puzzling choices. One waiter bussing a table wrestled with all the plates, glasses, and paper covering rolled into an almost unmanageable package before heading back to the kitchen. It was slightly scary calamity knowing one false move would have spilled the entire mess on customers nearby. It would have been better for him to make two trips. Being away from the downtown scene, this restaurant CAN and SHOULD do more to compete with College Avenue locations like Kitchen and Rare which do their job well. Adding more up-scale sides like sautéed Shitake or Black Truffle mushrooms, uncommon vegetables, wild grains, or spicy side dishes like Chutney will make these main courses STAND OUT and drive more customers their direction. Hey Management...here's an idea...how awesome would a Hatch Green Chile Mole be with the Pork Cutlet? Now That's a good pairing!

    Good food, well thought out cooking, good utensil, good service, excellent atmosphere. This place will go toe to toe with any five star restaurant in anywhere in the nation.

    This place keeps disappointing. I got engaged here and thought I would take my wife again for her birthday. Bad decision. No greeter at the door. Had a reservation and they were supposed to dress up the table for my wife's birthday. That didn't happen. After being sat we waited 7 minutes before being greeted. Got my salad wrong and then took it back and forgot to replace it. I asked for drink recommendations. He had none. Asked about the buffalo ribeye and he says he usually only does the filet. The bread was also cold and seems very unappetizing. We ended up leaving early. In short, I have had better experiences at Chillis than this. They owe me big time.

    As a food blogger, there are very few restaurants in Fort Collins where I feel like I'm going out for a haute, gourmet dinner. Where I feel that I've stepped into a special place, where the quality and creativity of the dishes are going to set themselves apart from every other restaurant in town. I can count on one hand how many restaurants we have like that in Fort Collins and The Canyon Chop House is one of them. The Canyon Chop House made its place in the Fort Collins dining scene in 2005 when Matt Schump renovated an old bank, keeping the vault and using it as a private dining room, turning the entire restaurant into a gourmand's delight. However, even in it's elegance, The Canyon Chop House embraces the laid back attitude of Fort Collins where casual dress is common and appropriate. Tucked away on a funny little corner in Old Town (off of Oak Street), large windows along the back give it an open, airy atmosphere, despite the deep, earthy hues and I especially love the open kitchen where you can watch the seamless activity that goes into making your meal. The Canyon Chop House is one of those places that is thoroughly involved in the community and local sustainability. Supporting local farms and businesses, there is a long list of places where they purchase locally grown foods. Not only are they conscientious in their purchasing, but also on the carbon footprint they leave. Their used cooking oils are recycled for bio-diesel and discarded food is given to Wolf Moon Farms for them to use as compost. On the social side, they host the monthly meetings for the Local Harvest Happy Hour Group, creating a happy hour menu featuring seasonal local ingredients. Our dinners here have been celebrations of special milestones, which brought us to The Canyon Chop House infrequently. With the spring weather warming, the patio opening and with it, a new menu that will feature more casual, lower-priced items with still the same great quality and creativity, I can see myself hanging out here a little more often than a few times a year. With delicious food like this, isn't every day a celebration?

    Outstanding all around. Excellent ambiance, excellent food, excellent service. I was disappointed to read the bad review of Canyon Chop, but in my experience it was all top notch. The service was very attentive, and one of the best steaks I've had in a while.

    Canyon is my favorite restaurant in Fort Collins for steak. The atmosphere is nice and service is good. The steaks are comparable to steakhouses in big cities, maybe with less variation, no special rubs or cuts. Be aware that the oysters at Canyon come with a strong hot sauce. I found it overpowering, taking away the taste of the oysters. The cheese plate is decent.

    This restaurant is expensive, as other reviewers have mentioned. I tend to eat at the bar and partake in the "bar menu" options. The atmosphere is beautiful, the food is delicious, the service attentive. This place is, hands down, my favorite restaurant in town.

    I have been hearing great things about the Chop House for some time and I was anxious to try it when I got back to Fort Collins. Getting there took a few trips around the block before we found it. Canyon Chop House is a beautiful restaurant set inside of an old bank. It's a very lively restaurant with the show kitchen, the decent sized crowd of diners and the servers rushing through the dining room in their jeans and black shirts. The patio was large with a wall of windows looking on to it from the restaurant but because of the cooler weather we sat inside. The restaurants private dining room is the old bank vault...very cool. The vault seemed to be an intimate setting for a private party. The service was gracious and rarely kept us waiting for anything. Looking through the folded, brown paper menu it looked to be a typical chop house with all the cuts of beef that anyone would want with their specialties being composed entrees of meat and fish. They also had a few specials that sounded good. The thing that I most liked about the menu is the list of local farmers and ranchers that they use for their menu...and it was an extensive list. The table was served sliced bread and butter that was more of a filler than anything else, seeing it's lack of flavor. We shared the beef carpaccio with truffle oil, capers, red onion and crostinis which had great flavor but was a little too warm for raw beef. Between the three of us we had the special, pan roasted halibut with a crab salsa, the trout and short ribs with gnocchi and demi. The trout was commented on as the best that they have had. As for myself and the short ribs that I had, they were delicious with a more than generous portion of demi glace. I love to drag my short ribs and potatoes through demi but the amount they served was heavy handed and made everything sit like a brick. Despite the great taste, one thing I could not believe was that the cut of meat that was served to me was a short rib...maybe a portion of brisket, inside round or top round, but not a short rib. I've never seen a short rib served in a 8oz square with no signs of a bone removed. It only makes me think that they are using a cheaper cut of meat instead of what is being sold on the menu. Yes, it was flavorful, but it seemed to me they are cutting corners. Overall, this is a beautiful restaurant with great service and a good diverse menu where the pickiest eater could find something they would come back for.

    My girlfriend and I found Canyon Chop House in one of those tourists' food guides on a visit to the Fort in 2010. The chef prepared a good pumpkin soup as an amuse bouche, then we had the crab cakes and scallops as appetizers. Both were very good and tasted fresh. For my entree I had the pork chop with a side of garlic mashed potatoes, also very flavorful and well prepared. The restaurant is in a remodeled bank, and I believe there are actually tables in the old vault. Nice decor, friendly staff and a very good selection of beers from CO and around the nation/world. This place turned out to be a really good find, a classy place to take someone special or to celebrate an occasion.

    Great service. Filet atop spinach was superb and cooked to order. Nice wine list. Would highly recommend to a traveler passing through Fort Collins in search of a high quality steak house.
